It was my birthday last Friday so I decided to bake myself a birthday keto cake. This is the first time in my life that I actually baked myself a birthday cake *smile *. I choose to bake a brownie cake which is also known as keto brownie cheesecake.
I followed the nut-free, flourless keto brownie recipe from Ditchthecarbs.com :-
- 6 eggs
- 160 g butter melted
- 60 g cocoa unsweetened
- 1/2 tsp baking powder
- 2 tsp vanilla
- 120 g cream cheese softened
- 4 tbsp granulated sweetener of choice or more, to your taste
- Place all the ingredients in a mixing bowl and using a stick blender with the blade attachment, blend until smooth.
Pour into a lined square baking dish (21cm/8.5 inch).
Bake at 180C/350F for 20-25 minutes until cooked on the centre.
Slice into squares, rectangle bars or triangle wedges.
The keto brownie cake tasted pretty good except that I did not put in enough sweetener (only 3 tbsp). No one at home likes it because it was not as sweet as a regular brownie cake so I am going to finish the cake all by myself.
