I just turned another year wiser on Saturday. My family and I had lunch in Bangsar and I chose to eat at Three Little Pigs because of their keto menu. I will share what I ordered that day in another post. Since it was my birthday, I was hoping to eat a slice of keto cake. Sadly, there were no keto cakes at Three Little Pigs. I tried to call a few other restaurants nearby which offer keto food and I was disappointed to know that they do not sell keto cakes too. So I went home and baked myself a Keto Brownie Cake.
Luckily I have all the ingredients at home especially the Zerro Erythritol from Joy Premix , which is a 100% Erythritol. Yes, we can now buy Erythritol in Malaysia. There is no need to buy them from the US and pay exorbitant courier charges. What I like about Zerro Erythritol is that it does not leave an after-taste in the mouth. Also, erythritol can be fully absorbed by our bodies and this cause less digestive distress. Plus, erythritol does not raise blood sugar at all, while some other sugar alcohol (artificial sweetener) has a small impact.

The Nutrition Facts of Zerro Erythritol.

INGREDIENTS
- 1/4 cup Unsweetened Cocoa Powder
- 2 tbsp Coconut Flour
- 3 large eggs (room temperature)
- 12 tbsp Butter
- 1/2 cup erythritol (I used 1/4 cup instead and I prefer a less sweet cake)
- 1/2 tsp vanilla extract
- Pink Salt
INSTRUCTIONS

Preheat oven to 325 degrees

Combine cocoa powder, coconut flour, and salt, and set aside

Add erythritol, eggs, vanilla and mix with a hand mixer.

In a 3rd bowl, melt butter in a microwave.

Add egg mixture to the butter.

Once the wet ingredients are all combined, begin adding the dry ingredients. Add 1/3 of the dry mixture and fold into the wet. Repeat this process 3 times until all of the dry mixture is used.

Pour into a loaf pan.

Place into a 325 degree oven for 50-55 minutes.
Mixed all the dry ingredients together.

it is so delicious and I am a happy camper. I have also used JoyMix Erythritol when I made my low carb coconut flour pancakes. They were simply delicious.
