My Simple Lunch

When it comes to lunch, I sometimes find myself stuck in a rut and wondering what to eat. With busy days and little time to spare, elaborate meals are rarely on the menu. I often buy food from the morning market like fried chicken wings, chicken rendang or dishes from the mixed rice shop to eat for lunch. After having those for a while, I get really bored.

I’ve come to appreciate the beauty of a simple, fuss-free lunch. Today’s lifesaver? A humble wrap filled with eggs, spinach, and cheese. It’s nothing fancy, but it’s quick to make, nutritious, and most importantly, tasty.

I bought a box of spinach last week and was hoping to make some wraps for missy when she goes back to her dorm but I was too busy last weekend to cook any food for her. The spinach was going to turn yellow soon so I thought I better whip up something.

Beat 2 eggs and fry them on the pan.

Add handful of spinach onto the egg.

I didn’t have mozzarella on hand so I made do with a bag of mixed cheese meant for pizza toppings. The blend melted beautifully.

Fold the egg in and it looks like wrapped tortilla. This simple combination was warm, hearty, and comforting. There’s no fancy ingredients or complicated steps. Just something that I can whip up in minutes.
