I wanted to make it the very next day but I realised that I forgot to buy the baking powder *slaps forehead* So gotta wait till we went grocery shopping during the weekend. So, after I got the baking powder, I realised that I didn’t have a ripe banana *slaps forehead again* I got some bananas on Monday but have to wait till they are really ripe. Today, the banana was just right and I finally began my project 😉 Fyi, this is the first time in my life that I tried to make a cake. I don’t have an oven so this recipe is really fantastic as I only need to steam it 😀
Put all the ingredients in a bowl and whisk them
All ready for steaming
After 15 mins, this is the result. My hubby said it looked like a big pau =) Made him eat some 😉 It was pretty ok, not too sweet but not fluffy enough. Guess it’s because I put less baking powder (1 teaspoon) than the recipe called for as I didn’t want it to taste bitter. Next time I’ll use 2 bananas instead of 1 because I prefer a more banana taste 🙂

Here is the recipe :-
1 ripe banana, mashed
1 egg (can be substituted with 50ml of milk or water; I once ran out of egg and substituted with water and it worked fine)
1 teaspoon oil
2 teaspoons water
2 teaspoons baking powder
1/4 cup icing sugar
100g (close to 1 cup) all-purpose flour
2 tablespoons of semi-sweet chocolate chips or raisins, optional
Mix everything up and steam it for 15 to 18 minutes.

actually i found that the cake tastes yummy with baking soda instead of baking powder. but if you want to put baking soda then cannot put too much as the cake will turn bitter.

This is soooo spooky! You’re right, the plate is exactly the same as ours. I remember we got it from an outlet store in Bellingham for something like $1 each because they were what they called a “transition” batch where the whiteness is not exactly very white. They all looked the same to us. For $1, we could not resist and bought dozens of pieces of the collection. They no longer make this design anymore. BTW, enjoyed reading your site!
