My friend Annie is the one who introduced me to this Kampua noodle, a famous Foochow cuisine. It is usually served with slices of barbecue pork (char siew), similar to Wanton noodle. Annie told me that this Instant Kampua noodle is the closest to the real thing one can find in the coffeeshops in Sibu.
A packet of the Kampua noodle from The Kitchen Sibu comes with soy sauce, fried shallots, lard and vegetable oil. All you need to do is cook the noodle with a pot of water. When done, drain the noodle and mix it with the seasoning. I like to add some vegetables, beancurd and fishball to mine, as per the photo below.
The noodles come in dark soya sauce and white soya sauce. I prefer the dark soya sauce. The Kitchen Sibu Instant Kampua Noodle / Meepok contains no preservatives and they have a short lifespan of 3 months. My family loves this instant Kampua noodle.
The above is how the packet looks like. You can check out https://www.facebook.com/thekitchensibu for more information. I am glad that there is a man selling them at the market near my home. He only comes on Monday so I usually get my supplies from him unless Annie goes back to Sibu for holidays, she would bring back some for me. You can also find Sibu Kampua Noodles here.
