happy call cupcakes

I decided to bake some cuppies using my HCP last weekend.  I followed the recipe from Munch Ministry – (http://munchministry.com/recipe-archive/fluffy-butter-cupcakes-with-moist-texture). The cuppies turned out ok but a bit dry.   Below are some photos of my weekend bakes.

Pour the mixture into the cuppies.  I added some chocolate chips.  I lined the pan with baking sheet to prevent the bottom from burning but they still did a little bit.  I read the comments of that particular post later and it was mentioned that we have to put the cupcakes on top of a steamer rack instead.

Here are the cuppies with pink icing.  Look funny? I need to improve on the icing.  My sister said the cupcake she ate has a strong soda bicarbonate smell but they tasted ok with me.  Perhaps I didn’t mix them well.  Ashley said she prefers the cupcakes without the icing.  Need to make another batch soon to improve my ‘baking’ skill.

    HCP can even bake cupcakes? It really make wonders right? It is good to invest one for a small family. Just nice to bake small batches. U have bitten by the baking bugs again… I like ur icing topping colour…cute pinky! Good job Barb.

    Your HCP can bake better than my oven! The pink cuppies look sweet… reminds me of 7-11’s Slurpee :p

    Oh~ HPC can bake too! I thought it’s good for frying, with less oil residue on the kitchen tiles.

    Nice cupcakes with pink icing 😀 Who would have thought of putting pink color, because I would always think of chocolate and vanilla.

    Thank god for me, HCP fever is over. Else, my oven & wok will be doing nothing. So ended up, didnt buy one. Still baking using good ole oven.
