Beetroot Soup

I am running out of ideas on what type of soup to boil for the family.  Been scouring the internet for more ideas and I chanced upon Beetroot soup.  I have tried beetroot (steamed) which was one of the vegetables I had to eat for the “Lose 10 Pounds in 3 Days Diet” and I didn’t quite like it.  Anyway I decided to try boiling a soup with it 🙂  When hubs heard, he said “Huh?  The soup is going to be so red and Ashley won’t like it”.  Well he was wrong 🙂

The soup was so sweet and nourishing.  The ingredients :- pork  bone, carrots and corn and boil for 2 hours.  Just add a pinch of salt after the soup is boiled.  It didn’t turn out very red and Ashley drank it 🙂

  2. I like beetroom soup with corn.. but like you, dislike eating it on it’s own.. you did the 3 days diet too? I did too! not shredding any pound though..

    Yummy, I love beetroot soup too. The first time I made it (just recently) I also tot that Elyssa and hubs won’t drink. But I was surprised that both liked it very much! 🙂

    Beetroot is very nutritious food. It is good to take as juice and soup. Have to try to boil pumpkin soup and chinese yam?

    I’m aware that beetroot is a very healthy food, but I have the same concern as yours. Up to now I still haven’t cook this soup.

    Btw, my daughter dislike corn in the soup, weird taste bud, kakaka!

    Yes, beetroot is very nutritious. I’ve been feeding Chloe beetroot soup and porridge since she was a baby. I even cook beetroot stew, besides drinking its raw juice :p I noticed that the colour will “fade” the longer you boil it. The soup is at its reddest at about 30-45mins into boiling time so I usually don’t overboil it. The soup may not be as tasty and “pekat” but I think it’s more nutritious if a little bit of colour is retained… just my thought 🙂

    This is my girls’ favorite soup! They are not at all turned off by the red like blood color. They love it! Sometimes, I will throw in some vermicelli and that will be their dinner. Pretty nutritious with meat, veggie and carbs 😀
