Usually on weekends, I would go to the coffeeshops nearby to pack some food for missy for her breakfast. Usually it’s wanton or roti canai for breakie. Sometimes it would be dim sum or tai kau meen (Chinese pancake). Last Saturday, I woke around 8am and I told missy that I would make her breakfast. I thought of making her some pancakes but since I have bought some small ceramic bowls (ramekins) from Daiso, I changed my mind.
Instead of pancakes, I baked banana bread pudding for the first time. The ingredients needed are 6 slices of bread, 2 eggs, 3 bananas, 1 tsp of vanilla essence and 2 tsp of sugar. Butter the bread and tear them into pieces. Whisk eggs and add the vanilla essence and sugar. Cut the bananas into small pieces. Put the bread and bananas into the bowls. Slowly pour in the egg mixture and bake at 190 degree C for 20 minutes. Easy eh? Luckily I have all the ingredients available for me to whip up something in a jiffy.
