Japanese Potato Salad

This is a very easy recipe and is my family’s favourite.   I made some over the weekend to go with our spaghetti.

I followed the recipe from Justonecookbook.com.  The ingredients are :-

  • 4 potatoes
  • ½ tsp. salt
  • 1 egg
  • 1 carrot
  • 1 Japanese cucumbers
  • Kewpie mayonnaise (the amount is up to you)
  • Fresh ground black pepper

Firstly, cut the potatoes and carrots into smaller pieces and boil them until you can use a fork to go the potatoes smoothly.  Drain.  Mash the potatoes and leave a few chunks for texture.  Mix in boiled egg together with carrots and cucumber which have been cut into smaller pieces.  Add mayonnaise, salt and pepper.  Refrigerate for a few hours before serving.  Super duper easy eh?

I used a vintage pyrex dish to serve the Japanese potato salad.  It belonged to my mother-in-law and she has kept this for over 30 years.  So precious!
