Do You Like Pickles?

One of my weekend wishes for last week is to try making the pickled cucumber after seeing the recipe at Angelolli.com. I love pickles though I can’t eat them too often 🙂 Went out to buy the ingredients and I made the pickled on Sunday 🙂 It is one of Harumi Kurihara’s recipes.  Harumi Kurihara is a Japanese celebrity chef and is famous for her no-fuss and simple dishes.   Here are the ingredients :- soy sauce, rice vinegar, sugar, salt, cucumber and sesame oil.  I used Japanese cucumbers.

Mix 100ml each of soy sauce and rice vinegar with 4 tablespoons of sugar and sesame oil to taste. This is for the pickling sauce.  Cut the cucumber lengthwise and remove the seeds. Don’t peel the skin.  Then cut into bit-sized pieces. Julienne cut the ginger.

Put everything together in a Ziploc bag and keep in the fridge for 2 hours before serving.

They are cucumberlicious!  Hubs like it too.  Goes well with Garlic rice or Bbq.  Arrrrggghhhhh….no more bbq, no more bbq.  Do give this recipe a try if you like pickled cucumbers.  I will be on a lookout for Harumi Kurihara cookbook now 🙂

    hey, I love pickles.. but my mum does it for me.. she adds in some chillies too.. spicy and sour! gosh..now swallowing saliva.. gross! hahahaa..

    I love pickles very much but never try this recipe before. Pickles are very appetizing and delicious, easy to prepare too!

    Add soya sauce? Mine is another version of pickles.

    Marinate the cucumber with salt and sugar, keep in fridge, drain the water and add white vinegar and sesame oil and garlic into it. Nice and yummy.

    Maybe should try out your recipe one day.

    i make my cucumber pickles by marinate them with salt. wash off after an hour and add some sugar and cili padi. Now i wanna try using your method!
