So, ever since I came across the easy keto pancake recipe shared by one of the members of the Keto Baked Group on Facebook, I am hooked. What I love about this recipe is that you only need 5 ingredients and there is no almond flour or coconut flour involved. Here are the ingredients you need to make this pancake :-
50g cream cheese (The original recipe states 2 tbsp of cream cheese but I use 50g)
2 eggs
2 tablespoons of psyllium husk powder
1 tablespoon of Erythritol. I got my Erythritol from JoyMix.
1 tablespoon of butter to oil the pan
Mix everything well and start cooking. If you find that the pancake mixture is a tad too thick, just add some water.
Oil the pan with some butter and pour a ladle of pancake mix into it.
Here are my yummy keto pancakes. Goes well with a cup of Low Carb Coffee and some Hong Kong Drama *wink*.
