Keto Sushi For Father’s Day

Father’s Day was last Sunday and we did not go out for a celebration as I am still not comfortable with dining in a restaurant yet. I was craving for sushi after seeing someone posted about keto sushi in one of the keto groups.  So, off I went looking for the ingredients so that I can make some keto sushi for Father’s Day.  Hubs is also reducing his sugar and carbs intake therefore he would eat whatever keto or low carb food that is available.

Managed to buy the Yakinori in Jaya Grocer.

I was too lazy to make caulirice so I decided to fill the sushi with egg, ham, cucumbers and mayo.

Here is my simple keto sushi.  At last, I got to curb my cravings.  Will be making this more often now as it is so simple and delicious!  Maybe I should put tuna and avocado next time.

I also baked a keto butter cake that day, following a recipe posted by Deniece in the Keto Baked Group on FB.

Here is the recipe:

220 gram butter  (I would reduce it to 200 gram because I find the cake pretty oily)
50 gram Xylitol
4 eggs separated
1 tsp vanilla extract
150 gram almond flour
18 gram coconut flour
1 tsp baking powder
a dash of salt
1/2 tsp of cream of tartar or lemon juice
60 ml heavy cream

Cream butter and xylitol till light
Add vanilla extract
Add yolk one at a time
Add flour and baking soda, and beat till incorporated.  Add heavy cream and beat.
Whisk white till foamy, add tartar or lemon juice. Whisk till stiff peak.
Add 1/3 of the white into egg batter.  Whisk till lighten batter.
Add another 1/3 and whisk together.
Add last batch and fold till batter is smooth.
Pour into a 16cm baking pan, greased and lined with baking paper
Bake at 180 deg C for 50 / 55 minutes.
