After a long day at work, I am quite lazy when it comes to cooking for food. The last thing I want is to spend hours in the kitchen. I prefer something that’s easy to cook and fuss-free. Something quick, nutritious and satisfying that requires minimal effort. An ”all-in-one” dish is what I love best. My favourite is always soup base food like kimchi jiggae, miso soup, and stir-fry vegetables.
So a few days ago, when hubs and missy were out, I decided to cook something for myself. I opened the fridge to see what I have in there that I can whip up in a jiffy. Found some bok choy (Chinese cabbage) and decided to stir fry them with garlic and some soya sauce. Then I added 2 fried eggs to go with the vegetables. A simple plate of sauteed bok choy paired with crispy fried eggs are easy, flavourful and perfect for my tummy.
