It is not easy to get keto food in KL and there are only a handful of restaurants and cafes that serve keto food and keto desserts. Also, keto food such as keto bread, keto cakes and keto ice-cream are rather expensive compared to non-keto ones.

So what do I do on those days that I feel like having some keto desserts? I try to make them myself. Luckily I discovered a recipe for making easy keto ice-cream. It is known as Keto Mason Jar Ice Cream that I can easily whip up at home. Yes, fellow keto-ers can now enjoy their very own version of keto ice-cream with the right keto ingredients and steps.

Before I go into the ingredients needed and the steps to make the ice-cream, I would like to share with you the different low-carb and keto-friendly sugar substitutes that I received from KetoGrocer.my. This time, I have decided to use The All Natural Allulose and Erythritol to make my keto ice-cream.

Ingredients

1 Mason jar
1 cup heavy cream / whipping cream
2 tablespoons sugar substitute
1 tablespoon unsweetened cocoa powder (for keto chocolate ice-cream)
1 teaspoon vanilla extract
Sugar free chocolate chips or nuts or frozen mixed berries (optional)

Instructions

Mix all ingredients in a wide mouth mason jar. Screw the lid on and shake vigorously for 2 minutes. The liquid inside would double in volume and  fill the mason jar. Freeze for 3 hours up to 24 hours.

Since I have 2 mason jars, I decided to make each one with a different sugar substitute. The first one I made was with Allulose. This is the first time I am taking Allulose. As you can see, the sugar substitute looks like icing powder. Allulose is a natural sugar replacement that is found in certain fruits such as jackfruit, figs and raisins. It is approx 70% as sweet as sugar.

I have also added a teaspoon of sugar-free cocoa powder and some pecan nuts into the jar.

For the other mason jar, I used 2 tablespoon of erythritol.  It is a naturally occurring sugar alcohol and it contains zero calories. Erythritol can be found in a variety of fruits, vegetables, and fermented foods and beverages. It is more coarse like normal sugar.

I have added some frozen strawberries into this mason jar.

Gave both the jars a good shake and put them into the freezer overnight.

I took out the chocolate keto mason jar ice-cream to eat while watching my favorite K-drama earlier today. It was so delicious and certainly an invigorating and refreshing experience especially on a hot afternoon. It tastes just like regular ice cream.

I find that allulose sweetener is not as sweet as erythritol. Perhaps I should add another half a tablespoon when I make them the next round.  I am thinking of making some keto pancakes with allulose one of these days, so do stay tuned.
