Comforting Chore

Every time when I catch a glimpse of the pile of clothes waiting to be ironed, I would sigh as it means there’s another task that I have to get done. Ironing is a chore that needs patience and often feels like the most mundane of household duties.

However, I found myself feeling in-between. Strange right? While I dread to start ironing, yet sometimes I feel calm after I begin. Actually it is rather therapeutic for me. Maybe it’s the gliding of the iron over the clothes that transform the wrinkles into crisp order. I really look forward to seeing the clothes wrinkle-free. It gives me a sense of control.

In order to make the time pass easily, I often pair ironing with something I love and that is watching my favourite drama or movie on the tablet. As I watch the story unfolds on the screen, my hands are busy ironing. Before I know it, the pile of clothes is gone.

There’s something quietly satisfying about creating order from the mess. Who knew a hot iron and a good drama can be a soothing combination.

Busy August and September

And just like that, August and September have flown by in a blur.  These two months have been nonstop planning, paperwork, and a lot of emotions. Although Aug and Sept were nothing short of hectic, they were also filled with excitement, anticipation, and immense pride as Ashley embarks on a new chapter in her life.

It all began with the long-awaited news in early August when she received her university’s approval for a one-year campus exchange to the UK. Studying abroad has always been one of her biggest dreams, and this inter-exchange program made her wish come true. Her five other course mates are also going together and this has brought a great relief for me. I am comforted in knowing that she wouldn’t be alone in this journey.

The girls dove into preparations right away. From scouring accommodation options, negotiating with the property agent, to booking flights and train tickets, they managed everything with independence and teamwork. They found a place to live together near the university, a shared home away from home that makes their transition to UK life smoother.

As soon as she received the CAS letter (Confirmation of Acceptance for Studies), the real stress began with the compilation of documents for her student visa application, getting a Tuberculosis test, and making sure everything was perfectly in order. Thankfully, her visa was approved in just two days, a small miracle during the chaos.

However, this doesn’t mean the process was over. With the new e-visa system, Ashley had to create an account on the UK government’s site. That step came with its own share of stress. The passport scanning feature didn’t work as expected as there was a glitch with the embedded chip in her passport. Her friends experienced the same issue, which offered a bit of a reassurance. During this time, my own anxiety peaked. I don’t like to deal with Government procedures but watching Ashley navigate them with determination made me both proud and nervous at the same time.

Then came the big moment – the departure day. Ashley and her friends flew to London last Wednesday. I have been dreaded for weeks about saying goodbye at the airport. I thought I’d be a mess with tears and emotions. Surprisingly, I was pretty calm. Perhaps it was seeing the joy on Ashley’s face and the sparkle in her eyes. As long as she’s happy, I’m happy.

Her 2 luggage bags. She has 45 kg but only used 40kg. She has another carry on which is her backpack and it was around 7kg.

She flew with 3 other friends. Another girl went over earlier with her family.

Since arriving, Ashley and the girls have been adjusting well. The first few days were spent settling in. They were busy buying essentials, stocking up on groceries, and getting familiar with their surroundings. They even took a campus tour to get oriented. This week is Fresher’s Week and it’s filled with events and activities to welcome new students. Classes begin on the 30th for them.

Although I miss her dearly, I am comforted knowing she’s having the time of her life, surrounded by friends, and building memories that will stay with her forever. Watching her grow into this new phase of independence has been a beautiful and emotional, experience.

While August and September have been full, chaotic, and I feel overwhelming at times,  but they’ve also marked the beginning of an unforgettable journey.

They had to go to St. Pancras Intl to board another train to their uni. This was taken at St. Pancras station.

In the coming days, I would be sharing her life in UK and posting photos that she had taken as a way for me to document her new experience.

Low Carb Tuna Kimchi Wrap

Here’s another simple and easy to whip up dinner for me and the family. It’s Tuna Kimchi Wrap. This meal is low carb and quite healthy. It’s flavourful and nutritious. The tuna kimchi wrap require minimal ingredients. 

I used a can of tuna in water, 2 eggs, bacon bits, lettuce leaves, sliced onions and kimchi which I have ever-ready in my fridge. This is what I do.

  • Drain the canned tuna and transfer it to a bowl. You can mix in a little bit of mayonnaise or yogurt if you like a creamier texture. 
  • Chop the kimchi into smaller pieces if needed and add to the tuna mixture. Stir well to combine the flavors.
  • Chop up the onions, eggs and bacon bits and add to the mixture
  • Lay a lettuce leaf on a plate. Spoon the tuna kimchi mixture onto it.
  • You can also add green onions or sprinkle sesame seed for extra flavour.
  • Fold or roll the wrap tightly, then dig in.

My Daughter The Busy Bee

Since completing her first year at the university in May, missy has been on a whirlwind of activity. Just a week after her university break began, she secured an internship with a  non-governmental organization (NGO). This internship gave her a chance to dive into real-world working environment. As an organization that’s passionate about the environment and sustainability issues, missy worked closely with the dedicated staff members. Her role involved organizing impactful events such as river cleaning campaigns, upcycling items, urban farming, tree planting and more. These activities that are important for promoting environmental conservation and community awareness.

Missy’s involvement brought her to multi-national companies and she even travelled to Johor to participate in a large-scale event. It’s definitely an eye-opener for her. Throughout this time, she has stepped out of her comfort zone and tried to embrace new challenges and responsibilities. She got to learn valuable skills in event planning and engaging with others. She also has gained deeper understanding on the importance of sustainability which is in line with her degree program. All these boosted her confidence. We are proud of her proactive attitude and how far she has come.

Right after her 2.5 months internship ended, she embarked on a 7-day trip to Pulau Tioman which is part of her coursework to study the ecosystem. She and her friends collect data on the island’s ecosystem, and observing marine life. It’s a hands-on experience that enriches her understanding of environmental science.

Apart from coursework, the trip offers plenty of opportunities for adventure and relaxation. She did snorkeling in the crystal-clear waters of Pulau Tioman to explore the vibrant coral reefs.  Being her first time, she actually got scared after spending about 3 hours in the sea. She also did some kayaking along the river, visited the mangrove forest and also the turtle sanctuary where she learned about the conservation efforts to protect these majestic creatures.

Her summer has been filled with meaningful activities, personal growth, and memorable adventures. We are filled with excitement, anticipation and look forward to her next adventure as she prepares for her second year abroad. We are confident that this new journey will help her flourish and we will be supporting her every step of the way.

Mom Duty On Hold

I have written about prepping dinner for missy when she was staying in her dormitory here. As she eats lunch at the cafetaria daily, I would prepare some food for her to be eaten for dinner. I would do this every Sunday before she went back to her uni. I feel that it’s better for her to have some homecooked food instead of eating out all the time.

I have been cooking dinners for her since she entered her foundation year in uni.  She has a mini fridge to store the food. I would usually cook 3 or 4 dinners for her as she comes home every Friday evening.

Now that she’s on her break for a few months, my mom duty has been put on hold. There’s no need for a mad rush to cook on Sunday. I also don’t have to crack my head on what to cook too. It’s a nice break for me.

Below are some of the food that I have prepared for missy.

Lean pork with pasta and blanched broccoli & steamed siew mai

Tomatoes and ham pasta, & egg mayo sandwiches. Noticed the teeny weeny pastas in different shapes? Missy asked me to get these Prego Buddies pastas in fun shapes for her as they reminded her of her childhood. I used to cook them for her when she was a toddler.
