Low Carb Blueberry Muffins

Low carb blueberry muffins or keto muffins are one of my favourites.  They are delicious and easy to whip up.  If you want to give them a try, scroll down for the recipe which I got online. They are the Low Carb Keto Sugar Free Blueberry Muffins made with almond flour.

Recipes

  • 2 1/2 cup almond flour
  • 1/2 cup Erythritol (or any granulated sweetener)
  • 1 1/2 tsp baking powder
  • 1/4 tsp Sea salt (optional)
  • 1/3 cup Coconut oil (can also use butter)
  • 1/3 cup unsweetened almond milk (I replaced it with whipping cream)
  • 3 large Egg
  • 1/2 tsp Vanilla extract
  • 3/4 cup Blueberries

Instructions

  1. Preheat the oven to 350 degrees F (177 degrees C). Line a muffin pan with 12 silicone or paper muffin liners.
  2. In a large bowl, stir together the almond flour, erythritol, baking powder and sea salt.
  3. Mix in the melted coconut oil/butter, almond milk, eggs, and vanilla extract. Fold in the blueberries.
  4. Distribute the batter evenly among the muffin cups. Bake for about 20 minutes, until the top is golden and an inserted toothpick comes out clean.

Air Fryer Pasta Snacks

While scrolling Tik Tok, I saw many people cooking (or frying) Pasta Chips.  It is one of the latest TikTok trend to make chips from cooked pasta. I decided to give it a try since we have an Air Fryer. 

HOW TO MAKE PASTA CHIPS

  1. Cook that pasta al dente in a pot of salted water.
  2. Drain the pasta and transfer it to a mixing bowl.
  3. Add olive oil, parmesan cheese and whatever spices you like.
  4. Toss well to combine to make sure the pasta is coated with the oil, cheese and spices.
  5. Air fry until golden and crispy.  You may need to stop it half way to shake the basket a few times. 
  6. Remove from the air fryer and allow to cool slightly before enjoying.

My ingredients.  I used spiral pasta.

The verdict? Everyone said the pasta was hard and need jaws of steel to eat them *roll eyes*.  Something must have gone wrong during the cooking process. Maybe I cooked them for too long?

Will try to make them again with less time in the Air Fryer.

The Jade Plant Saga

Last year, I bought a jade plant for Chinese New Year because according to my mother-in-law, it is good for the house. Jade plant is a succulent plant that is also known as a lucky plant, money plant or money tree.

Alas, after a few months, the leaves started dropping one by one.  I think I over-water the plant.  So after that pot of jade plant died, my mother-in-law gave me another pot which she has been growing at her other son’s home. That one also died and when she was about to come to my house, I tied the stems with red ribbons (as it was a week before Chinese New Year).  I was hoping that she didn’t notice it but she did.

The above is Pot 2 from my mother-in-law after the first pot died. The leaves also dropped out one by one and the stems became soft and died.

This is the pot of jade plant that I bought from the market a few weeks ago.  It cost RM15.  I have been watering it only once a week or when I feel that the soil is dry.  I hope this jade plant will grow properly.  I have no problems with other green plants but I just can’t seem to grow jade plants and it is driving me insane!

She Tested Positive

I blogged about my stressful week last Saturday and this is the story.  I was a wreck about 2 weeks ago when Ashley tested positive.  She started feeling a little under the weather on 1oth March when I saw her switching on the aircond in her room around evening.  Usually she would only switched on the aircond just before bed.  She told that she was feeling hot and we all thought maybe it’s due to the hot spell we are experiencing now.

Then on the 12th March (Saturday), she told me she was feeling tired after we came back from the park nearby. Later that day, she said she felt warm and her temperature was around 37 to 37 degree C. Gave her an Actifast before bed and she was ok the next morning. She did wake up with some runny nose but it stopped afterwards. Gave her a nasal self test kit and it was negative. Then the next day which was a Monday, she’s fine until the evening when she said her head felt heavy. I quickly got her to do another nasal self test and it showed positive immediately.  My heart sank but I was pretty calm.  She did another saliva test just to confirm and it showed positive too.

The silly girl was crying and kept saying sorry.  I told her it’s not her fault and she doesn’t have to be sorry.  She knows how careful we have been all these while.  We never go out to the mall or dine out since we came back from Ipoh on 4th February after the Chinese New Year celebration.  That was when the cases started to escalate.

I quickly sent her to her to quarantine in her room and began sanitizing the house. Everything was a blur at that time and I couldn’t even think straight.  Luckily I have my group of friends who calmed me down and offer all the support I need. Whenever I am not sure of anything, they were there to give me advice. My family was very concerned too and my sisters sent over a care package for Ashley and me.

This is a list of things that I got ready for Ashley during her 7 day quarantine:-

  1. Cough syrup for dry cough
  2. Expectorant for phlegmy cough (the phlegm came later)
  3. Betadine Throat Spray
  4. Flu meds
  5. Actifast
  6. Salt water with lemon juice for gargling throat daily ( 3x a day)
  7. Vitamin C
  8. Vitamin D
  9. Probiotics

She was still feeling fine on Day 1 of the quarantine which was on the 14th March.  The symptoms started to show on Day 2. She had runny nose, cough, sore throat and low grade fever.

On Day 3 and Day 4, she started to feel lethargic and nauseous.  All the other symptoms were reducing.  Despite being in quarantine, she was still attending online classes and didn’t really rest.  She said she dozed off during some lessons in between.

Day 5, she tested negative on using the nasal self test kit.  Then all of a sudden, the runny nose, cough and sore throat went away.  She still felt tired and nauseous.  On Sunday, she tested again because the school needs to see the test kit before she can return.  Her 7-day quarantine ended on Sunday.

She only came out of her room on Monday morning when it was time to school.  She misses her dogs very much and kept talking to them.

During her quarantine, she has been asking me to take photos of them and sent to her.  She even video called them.

Off to school she goes.

Today is already one week after she is out of quarantine and she still feels nauseous and gets tired easily.  I got her the anti-nausea pill from the pharmacy and she feels better after taking it.

Comfortable Shoes That You Don’t Want To Take Off

If you have been following my blog, you would know that I love shoes. I love buying shoes and I cannot get enough of them.  My mum who has seen my shoe collection said I should really build a larger shoe cabinet to store them because my shoes have taken over hubs’ space.

After my not-too-recent shoe incident, during Christmas to be exact, I have been looking for a pair of black heels.  I have blogged about that incident here.  Black shoes are highly versatile and they go with everything. After A Stressful Week

This week has been a stressful one for me. That explains the lack of post on my blog.  Things are better now and I will blog about it in a few days’ time.  In the meantime, I ordered some keto food for myself to de-stress.  

I got myself 2 sets of keto scones and 1 slice of keto buttercream cake from Kiara Cakes yesterday.  I was actually shocked to see the size of the keto food.  They are so small but more expensive than regular scones and cakes.  Boo Hoo!  Well I guess there is no choice unless I bake them myself. 

Wish keto food is not that expensive. Anyway, it was good to indulge in some of these.  I deserve them after a harrowing week.

I Need These To Keep Me Going When I Work

I have this thing for inhalers and rollers.  It all started with the Peppermint Field inhalers that I discovered during my trips to Bangkok. A whiff of the peppermint smell can calm my nerves.  Every time when I go to Bangkok, I would stock up.  What is it with menthol inhalers in Thailand? There are available in all pharmacies and also 7-11.

I read online that the Thais use them daily to cover up the nasty smell in the city or to mask the pollution.  The inhalers and balms can revive the senses and increase energy.

I also like those balms that give a very strong minty and burning sensation like the Axe brand medicated oil. I discovered the Thai brand – Siang Pure Balm which also give me instant relief.  I found them from a seller at the market.

He also brings in other types of inhalers. The bottom of these tubes is a small compartment with the oils in liquid form. You can drop some oil into the inhaler when the smell is not so strong anymore.  The oils can also be used to relieve mosquito bites.

My stash of stress-reliever and pick-me-ups when I am at the office or at home. They are great to keep me calm when I buy bitcoin with cash. Need to focus on the task.

Banana Paratha Pastry Using Air Fryer

If you don’t know already, I am a fan of TikTok.  I love checking out this app whenever I am free because it is very entertaining.  I get lots of hair DIY ideas, health tips, awesome dance tutorials and last but not least, cooking tips.  You’ll be surprised that there are many cool cooking tips and recipes on TikTok. I love to find simple and easy to cook recipes and would try them out.  The latest one is this Banana pastry made using airfryer.

The ingredients include banana (of course), frozen Paratha, an egg and sesame. So when I have 2 bananas left yesterday that were turning soft, I decided to try out this recipe with Ashley.

Took out the frozen paratha.  Do not defrost it because the paratha becomes soft real fast.

Peel a banana and roll it over the banana. Tuck in the ends and then slice it into bite-size pieces. Next, coat them with egg wash and arrange them in the airfryer.

Some funny looking banana paratha we got there *chuckle* Ashley didn’t roll it firmly.

We put them into the airfryer and cooked for 15 minutes at 180 degree Celsius and that’s all.  Ashley said they are good and hubs said they are very sweet. Must be the ripened banana. Try it out if you are a banana fan or roti fan.
